STAY CHILLED WITH A REFRESHING ALOE COOLER

Keep cool during the summer months with this refreshing aloe drink.

Aloe vera is believed to be deeply soothing to the intestinal tissue, which makes this shot a great choice for digestive complaints. It also said to have a cooling effect and that it can help mend internal scar tissue (it’s widely used topically for burns). Drink this once or twice a day – or simply have 1–2 tablespoons of aloe juice on its own – as a remedy or just for delicious refreshment.

Makes 1 x 150ml serving

4cm piece of fresh, edible aloe

(e.g. Aloe barbadensis) or

2 tablespoons aloe juice

150ml coconut water

A squeeze of lime

Wash the aloe and place it on a plate flat side up. Using a sharp knife, slice off the top rind. Cut into 4cm cubes.

Rinse off the sticky latex coating the clear flesh (it’s the flesh you want, not the gooey latex, which can be an irritant). Freeze what you don’t want to use straight away. Blend this with the coconut water and add a squeeze of lime.
